- In a medium saucepan, combine butterscotch chips and creamy peanut butter over low heat. Stir continuously for about 5 minutes until smooth.
- Remove from heat and stir in vanilla extract. Allow to cool for 3 minutes.
- Fold in mini marshmallows and salted peanuts. Be careful not to overmix.
- Drop mounds onto a parchment-lined baking sheet. Refrigerate for 15-20 minutes until set.
- Transfer to an airtight container. Store at room temperature for up to a week or refrigerate for 2 weeks.
