Step-by-Step Instructions
  1. Preheat your oven to 250°F. Grease a 12-cup Bundt pan with unsalted butter and dust it with flour.
  2. Chop your nuts and crystallized fruits, reserving some for decoration.
  3. Toss the chopped nuts and crystallized fruits with 1/4 cup of all-purpose flour.
  4. In a bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and mixed spices.
  5. Cream together 1 cup of softened unsalted butter and 1 cup of sugar until fluffy, then add egg yolks, 1/2 cup dark corn syrup, and 1/4 cup fruit juice.
  6. Gradually add the dry ingredients to the creamed mixture and mix until just combined.
  7. Beat egg whites in a clean bowl until soft peaks form, then fold into the batter along with the flour-coated nuts and fruits.
  8. Pour half the batter into the Bundt pan, add reserved nuts and cherries, pour remaining batter, and bake for 2.5 to 3 hours.
  9. Cool in the pan for 15 minutes, then invert onto a wire rack and cool completely.
