  • 0.5 cup Oil (Canola/Sunflower/Vegetable) Olive oil works as well.
  • 2 large Eggs
  • 1 cup Sugar Coconut sugar or favorite sweetener can be used.

Preparation Steps

  3. Add the dry ingredients: 1.5 cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 2 teaspoons of pumpkin spice. Mix gently until just combined.
  4. Fold in any optional ingredients like ½ cup of nuts or chocolate chips if desired. Stir gently to distribute evenly.
  5. Pour the batter into the prepared loaf pan, ensuring it fills to about ¾ full.
  6. Bake for about 1 hour or until the top is golden brown and a toothpick comes out clean. If it browns too fast, tent with foil.
  7. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack for an additional 30 minutes.
  8. Once cooled, slice the bread and serve it warm with butter or cream cheese.
