Preparation Steps
- Preheat your oven to 350°F (175°C). Grease your loaf pan or line with parchment paper.
- In a medium bowl, whisk together two eggs and ½ cup of oil until smooth. Mix in 1 cup of pumpkin puree and 1 cup of sugar until creamy.
- Add the dry ingredients: 1.5 cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 2 teaspoons of pumpkin spice. Mix gently until just combined.
- Fold in any optional ingredients like ½ cup of nuts or chocolate chips if desired. Stir gently to distribute evenly.
- Pour the batter into the prepared loaf pan, ensuring it fills to about ¾ full.
- Bake for about 1 hour or until the top is golden brown and a toothpick comes out clean. If it browns too fast, tent with foil.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack for an additional 30 minutes.
- Once cooled, slice the bread and serve it warm with butter or cream cheese.

Notes
For best results, do not overmix the batter and ensure your ingredients are fresh for optimal flavor.
