Ingredients
  

For the Muffins
  • ½ cup Unsalted Butter Melted
  • 2 cups Unbleached All-Purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Diamond Kosher Salt
  • ¾ cup Granulated Sugar Rubbed with orange zest
  • 2 tablespoons Orange Zest From around 2 oranges
  • 2 Large Eggs Room temperature
  • ¾ cup Full-Fat Sour Cream
  • cup Freshly Squeezed Orange Juice Plus more for glaze
  • 1 teaspoon Pure Vanilla Extract
For the Glaze
  • 1 cup Powdered Sugar Sifted
  • to taste Freshly Squeezed Orange Juice For desired consistency
  • a pinch Kosher Salt

Method
 

Steps
  1. Preheat the oven to 400°F (200°C) and prepare a muffin pan.
  2. Melt the butter in a small saucepan over medium-low heat.
  3. In a bowl, mix the dry ingredients together: flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine granulated sugar with orange zest in another bowl, rubbing the zest into the sugar.
  5. Squeeze oranges to yield ⅓ cup of juice.
  6. In a large bowl, whisk the orange-sugar mixture and eggs, then incorporate melted butter, sour cream, orange juice, and vanilla extract.
  7. Let the batter rest for about 10 minutes.
  8. Fold the dry ingredients into the wet mixture until just combined.
  9. Fill muffin cups ¾ full with batter and bake for first 5 minutes at 400°F, then reduce to 350°F for another 10-12 minutes.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
  11. For the glaze, mix powdered sugar with salt and enough orange juice to reach desired consistency.
  12. Drizzle glaze over cooled muffins and let set before serving.
