Ingredients
  

Scone Dough
  • 1 cup Heavy Cream Chilled
  • 1/2 cup Butter Melted
  • 2 cups All-Purpose Flour No substitutions
  • 1/4 cup Sugar Can substitute with maple syrup
  • 1 tablespoon Corn Starch No direct substitutes
  • 2 tablespoons Poppy Seeds Optional
  • 1 tablespoon Baking Powder Make sure it's fresh
  • 1/2 teaspoon Baking Soda Make sure it's fresh
  • 1/2 teaspoon Salt Adjust to taste
  • 2 tablespoons Lemon Zest Add to taste
Glaze
  • 1 cup Powdered Sugar No substitutions
  • 2 tablespoons Milk or Half and Half Can use water in a pinch
  • 1 tablespoon Fresh Lemon Juice Use fresh for best flavor

Method
 

Scone Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Chill the heavy cream in the freezer for about 10 minutes.
  3. Melt the butter in a microwave-safe bowl.
  4. Whisk together all-purpose flour, sugar, corn starch, poppy seeds, baking powder, baking soda, salt, and lemon zest.
  5. Combine chilled heavy cream with melted butter until clumps form.
  6. Gently mix the wet and dry ingredients until just combined.
  7. Shape mounds of dough on a parchment-lined baking sheet, 2 inches apart.
  8. Chill the shaped scones in the refrigerator for at least 15 minutes.
  9. Bake for 12 to 20 minutes, until golden brown.
  10. Prepare the glaze by whisking together powdered sugar, milk, and fresh lemon juice.
  11. Drizzle the glaze over the cooled scones and let it set.
  12. Optionally, sprinkle additional poppy seeds on top for garnish.
