Step-by-Step Instructions for Mediterranean Stuffed Sweet Potatoes
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prick each sweet potato several times with a fork. Place them on the prepared baking sheet and bake for 40–50 minutes until fork-tender.
- In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, fresh parsley, and mint. Stir gently.
- In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Pour over the filling and toss gently.
- Allow the sweet potatoes to cool for a few minutes. Slice them lengthwise and fluff the insides with a fork.
- Generously spoon the filling into each sweet potato half and serve immediately.
