  • 1 large Cucumber Seedless preferred
  • 2 cups Tomatoes Ripe, core removed
  • 1 medium Red Onion Optional to soak in cold water
  • 1/4 cup Fresh Parsley Chopped
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil Essential for dressing
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1 clove Garlic Mince finely
  • to taste Salt

Method
 

Preparation Steps
  1. Peel the cucumber, slice in half lengthwise, remove seeds, and dice into bite-sized pieces. Drain in a colander for 5-10 minutes.
  2. Core and chop the tomatoes into medium-sized chunks. Add to a large mixing bowl with the drained cucumbers.
  3. Peel and thinly slice the red onion, optionally soaking in cold water for 10 minutes to mellow the flavor. Add to the bowl.
  4. Finely mince the garlic and set aside.
  5. In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk together until emulsified.
  6. Combine the drained cucumbers, tomatoes, and red onion in a bowl. Drizzle dressing over the top and toss gently.
  7. Sprinkle with chopped parsley and adjust seasonings if necessary. Chill in the refrigerator for 10-15 minutes before serving.
