Step-by-Step Instructions

  2. In a large mixing bowl, combine cut chunks of chicken breasts and sliced zucchini. Drizzle with olive oil and add minced garlic, fresh lemon juice, dried oregano, basil, salt, and black pepper. Toss everything together for even coating.
  3. Transfer the chicken and zucchini mixture into a 9x13-inch baking dish, spreading it out evenly.
  4. Sprinkle a layer of shredded mozzarella or Italian cheese blend over the mixture. Optionally, include grated Parmesan cheese on top.
  5. Bake uncovered for 25-30 minutes until the chicken reaches 165°F and the cheese is golden brown.
