Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chunks of chicken and sliced zucchini. Drizzle olive oil over the top, then add minced garlic, lemon juice, oregano, basil, salt, and black pepper. Toss thoroughly for about 2-3 minutes.
  3. Take a 9x13-inch baking dish and spread the chicken and zucchini mixture evenly across the base.
  4. Sprinkle mozzarella and Parmesan cheese evenly over the chicken and zucchini layer.
  5. Place the baking dish in the oven and bake uncovered for 25-30 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is melted and golden.
  6. Remove from the oven, let cool for a couple of minutes, then garnish with freshly chopped parsley and serve warm.
