  • 1 large Cucumber English cucumbers recommended.
  • 1 cup Cherry Tomatoes Chop or leave whole.
  • 1/2 medium Red Onion Raw or lightly pickled.

Step-by-Step Instructions
  1. In a mixing bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  2. Heat a skillet over medium-high heat, adding a drizzle of olive oil. Once hot, place the marinated chicken thighs in the skillet and cook for 5-7 minutes per side until golden brown and cooked through to 165°F.
  3. While the chicken is cooking, prepare the tzatziki. Mix Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper in a bowl until smooth.
  4. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  5. To assemble, take warm pita bread, spread tzatziki, layer with chicken, cucumber, cherry tomatoes, and red onion. Roll tightly and enjoy.
