  • 2 ripe mangoes peeled and diced
  • 1 habanero pepper minced, adjust to taste
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/4 cup honey adjust to taste
  • 1/4 cup apple cider vinegar
  • 1/2 cup water or mango juice fresh mango juice preferred
For the Seasoning
  • 2 tablespoons brown sugar packed
  • 2 tablespoons soy sauce low sodium recommended
  • to taste salt
  • to taste black pepper freshly ground
For Thickening
  • 2 tablespoons cornstarch mixed with cold water
  • 2 tablespoons cold water

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a medium saucepan over medium heat. Add minced habanero, garlic, and ginger, sauté for 2-3 minutes.
  2. Add diced mangoes, honey, apple cider vinegar, water or mango juice, brown sugar, and soy sauce. Stir until well integrated.
  3. Bring to a gentle simmer, cover, and cook for 15-20 minutes until mango is soft.
  4. Blend the mixture on high until smooth. Be careful of the hot liquid.
  5. Return the sauce to the saucepan, mix cornstarch with cold water, and whisk into the sauce. Simmer for an additional 3-5 minutes until thickened.
  6. Taste and adjust seasoning as needed. Cool before storing.
