  • 1 can White Beans canned cannellini beans, well-rinsed
  • 1/4 cup Fresh Parsley chopped
  • 2 tablespoons Chives chopped
  • 2 cloves Garlic minced
  • 2 tablespoons Olive Oil extra virgin recommended
  • 2 tablespoons Lemon Juice adjust to taste
  • 1 teaspoon Lemon Zest optional
  • 1/2 teaspoon Dried Thyme fresh thyme is an alternative
  • 1/2 teaspoon Salt adjust to taste
  • 1/4 teaspoon Black Pepper freshly ground preferred
  • 1/2 teaspoon Onion Powder optional
  • 1 tablespoon Fresh Rosemary optional, substitute with dill or oregano
  • 1/4 cup Roasted Walnuts optional, omit for nut-free version

Method
 

Preparation
  1. Gather all your ingredients for the Lemon & Herb White Bean Dip. Rinse and drain one can of cannellini beans, chop the fresh parsley and chives finely, and measure the garlic, olive oil, lemon juice, and zest.
  2. In a food processor, combine the white beans, chopped parsley, chives, garlic, olive oil, lemon juice, lemon zest, thyme, salt, and pepper. Blend until smooth.
  3. Blend for 1-2 minutes, scraping down the sides as necessary. Adjust the blending time for a chunkier or smoother dip.
  4. If using walnuts, add them now and pulse a few times to incorporate without fully blending.
  5. Taste your dip and adjust flavors with more lemon juice, salt, or garlic if desired.
  6. Serve immediately with pita chips or fresh veggies, or chill in the refrigerator for 1-2 hours for enhanced flavor.
  7. Store leftovers in an airtight container in the refrigerator for up to 5 days.
