- In a medium bowl, combine lemon zest, lemon juice, extra virgin olive oil, Dijon mustard, grated garlic, salt, and pepper to create a vivid marinade. Whisk until well blended.
- Coat the salmon fillets generously with the prepared marinade and allow to marinate in the refrigerator for about 30 minutes to 1 hour.
- Preheat your oven to broil at 280°C (525°F).
- Trim the asparagus and arrange on a baking tray with cherry tomatoes. Drizzle with additional olive oil and season with salt and pepper.
- Carefully create space for the marinated salmon among the asparagus and tomatoes on the tray. Broil for approximately 11 minutes.
- Remove from oven and transfer to a serving plate. Optionally, sprinkle with Parmesan and garnish with parsley.
