Step-by-Step Instructions
  1. In a medium bowl, combine lemon zest, lemon juice, extra virgin olive oil, Dijon mustard, grated garlic, salt, and pepper to create a vivid marinade. Whisk until well blended.
  2. Coat the salmon fillets generously with the prepared marinade and allow to marinate in the refrigerator for about 30 minutes to 1 hour.
  3. Preheat your oven to broil at 280°C (525°F).
  4. Trim the asparagus and arrange on a baking tray with cherry tomatoes. Drizzle with additional olive oil and season with salt and pepper.
  5. Carefully create space for the marinated salmon among the asparagus and tomatoes on the tray. Broil for approximately 11 minutes.
  6. Remove from oven and transfer to a serving plate. Optionally, sprinkle with Parmesan and garnish with parsley.
