- In a medium bowl, combine 2 cups of plain Greek yogurt with the zest of one lemon, 3 tablespoons of freshly squeezed lemon juice, 2 tablespoons of honey, and a splash of vanilla extract. Whisk everything together until smooth and creamy.
- Grab your favorite serving glasses or small bowls and start layering! Spoon a generous layer of the lemon yogurt mixture into each glass, followed by a layer of crunchy granola, then a layer of fresh blueberries. Repeat the layering process until you reach the top of the glasses, finishing with yogurt.
- Top each serving with a sprinkle of fresh lemon zest and a few extra blueberries. Optionally, add a mint sprig on top for a refreshing garnish.
- Enjoy your Lemon Blueberry Parfait right away or store the lemon yogurt mixture in an airtight container in the refrigerator. Layer with granola and blueberries just before serving.
