Ingredients
  

For the Crust
  • 1 cup Graham Cracker Crumbs Substitute with digestive biscuits if preferred.
  • 2 tablespoons Sugar
  • 5 tablespoons Melted Butter
For the Filling
  • 16 ounces Cream Cheese Room temperature.
  • 3 large Eggs Room temperature.
  • 2 tablespoons Lemon Zest Use a microplane.
  • 1/2 cup Lemon Juice Can substitute with orange juice.
  • 1 teaspoon Vanilla Extract
For the Blueberry Sauce
  • 1 cup Fresh Blueberries Can combine fresh and frozen.
  • 1 tablespoon Cornstarch
  • 2 tablespoons Sugar
  • 1 cup Water Adjust for thickness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan with non-stick spray and parchment paper.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 12 minutes.
  3. In a mixing bowl, beat cream cheese with sugar until creamy. Add eggs, lemon juice, zest, and vanilla, mixing until smooth.
  4. In a saucepan, combine blueberries, sugar, cornstarch, lemon juice, and water. Cook over medium heat until thickened.
  5. Pour half the cheesecake batter into the crust, swirl in half the blueberry sauce, and then pour the remaining batter and sauce on top.
  6. Wrap the pan in aluminum foil and place in a larger pan with hot water for baking. Bake for 1 to 1.5 hours.
  7. Cool in the oven for 1 hour, then chill in the fridge for at least 4 hours.
  8. Remove from the pan, slice, and serve cold, optionally with whipped cream.
