Preparation Steps
  1. Press the firm tofu for at least 30 minutes to remove excess moisture, then cut into slabs or cubes.
  2. Toss the dried tofu pieces with cornstarch in a mixing bowl until evenly coated.
  3. Heat oil in a non-stick skillet over medium-high heat. Fry the coated tofu for 10 to 15 minutes until golden brown.
  4. Whisk together gochujang, light brown sugar, soy sauce, and rice wine vinegar in a medium bowl until well combined.
  5. Gently toss the cooked tofu in the sauce until well-coated and let it marinate for a minute.
  6. Combine purple and green cabbage with julienned carrots in another bowl; drizzle with vinegar if desired.
  7. Warm tortillas in a dry skillet. Assemble by adding crispy tofu and slaw into each tortilla and fold.
