  • 2 medium Cucumbers thinly sliced

  • 1 teaspoon Salt

Cooking Instructions
  1. In your slow cooker, add the ground beef, soy sauce, fresh ginger, minced garlic, and gochugaru. Mix everything thoroughly until the beef is well-coated with the flavorful marinade. Ensure your slow cooker is set to low heat.
  2. Cover the slow cooker and let the beef cook on low for about 4 to 5 hours. Stir halfway through to redistribute juices.
  3. While the beef is cooking, slice your cucumbers thinly and add to a jar with vinegar, sugar, and salt. Seal and shake to mix.
  4. Once the beef is cooked, turn off the slow cooker and let the beef rest for about 10 minutes.
  5. Warm your corn tortillas. Fill each with the tender Korean ground beef and top with pickled cucumbers.
