- Preheat your oven to 350°F (175°C). Prepare a 10×15-inch jelly roll pan by greasing it or laying down parchment paper.
- In a large mixing bowl, whisk together the pumpkin purée, granulated sugar, brown sugar, avocado oil, eggs, vanilla extract, and sourdough discard until well combined.
- In a separate bowl, mix together the all-purpose flour, ground cinnamon, pumpkin pie spice, baking powder, baking soda, and kosher salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into your prepared pan, spreading it evenly, and bake for 20–25 minutes.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- In a mixing bowl, beat the cream cheese and unsalted butter together until fluffy. Gradually add powdered sugar and mix in vanilla extract.
