Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a 10×15-inch jelly roll pan by greasing it or laying down parchment paper.
  2. In a large mixing bowl, whisk together the pumpkin purée, granulated sugar, brown sugar, avocado oil, eggs, vanilla extract, and sourdough discard until well combined.
  3. In a separate bowl, mix together the all-purpose flour, ground cinnamon, pumpkin pie spice, baking powder, baking soda, and kosher salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into your prepared pan, spreading it evenly, and bake for 20–25 minutes.
  6. Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
