Steps for Scotcheroo Bites
  1. Prepare the muffin pan by spraying it with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine corn syrup, sugar, and peanut butter. Stir constantly for about 3–4 minutes until smooth and slightly bubbling.
  3. Carefully pour the mixture over the Rice Krispies cereal in a large bowl and gently fold until coated.
  4. Using a medium cookie scoop, fill each muffin tin cavity with the mixture, pressing down slightly to flatten.
  5. Melt the milk chocolate and butterscotch chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
  6. Drizzle the melted chocolate mixture over each bite, allowing it to set for 10–15 minutes before serving.
