  1. In a large mixing bowl, combine the bread flour, kosher salt, and instant yeast. Gradually pour in warm water, mixing until dough is cohesive and sticky. Cover with a damp cloth and let rise for 2-3 hours.
  2. Preheat your oven to 240°C (450°F) about 30 minutes before baking. Place a heavy oven-safe pot inside to heat up.
  3. Once risen, flour a clean surface, scrape out dough, flatten it, and sprinkle half of the grated cheese on top. Fold edges inward until you form a compact ball.
  4. Transfer the dough onto parchment paper, shape into a ball, and sprinkle reserved cheese on top.
  5. Place the dough in the preheated pot, cover with the lid, and bake for 35 minutes. Remove lid and bake for an additional 10 minutes until golden.
  6. Transfer to a cooling rack and let rest for at least 10 minutes before slicing.
