  • 1 tablespoon fresh tarragon substitute with dill or parsley if needed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
For the Dressing
  • 1/2 cup unsalted butter hot and melted
  • 1/4 cup mayonnaise optional
  • 1 tablespoon fresh lemon juice or white wine vinegar
  • 2 tablespoons chives or green onions
  • 1 tablespoon fresh dill optional
For the Rolls
  • 4 rolls New England-style top split buns or other soft rolls
  • 2 lemons lemon wedges for serving

Preparation Steps
  1. Preheat your grill to medium-high heat, around 375°F (190°C). Toss the shrimp in a bowl with olive oil, tarragon, salt, and pepper. Skewer the shrimp.
  2. Place the shrimp skewers on the grill, cooking for about 2 minutes per side until opaque and firm.
  3. Melt butter in a skillet over medium heat. Cut buns in half and toast cut-side down for 1-2 minutes until golden brown.
  4. Chop the grilled shrimp into bite-sized pieces and set aside.
  5. In a bowl, combine chopped shrimp with melted butter, mayonnaise, lemon juice, chives, tarragon, and dill. Stir to coat evenly.
  6. Divide the shrimp mixture among the toasted buns. Garnish with paprika and extra chives. Serve with lemon wedges.
