  • 2 cups all-purpose flour substitute with gluten-free blend if needed
  • 1 teaspoon salt use kosher or sea salt
  • 1 tablespoon baking powder ensure it's fresh
  • 1/2 teaspoon baking soda
  • 1/3 cup granulated sugar brown sugar can be used
  • 1 teaspoon ground cinnamon or cardamom for a twist
  • 1/4 teaspoon nutmeg omit if not available

  • 1 large egg for egg wash, or omit for vegan alternative

  • 4 ounces cream cheese or vegan alternative
  • 1 cup powdered sugar sifted for smoothness
  • 2 tablespoons milk
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1/2 teaspoon ground cinnamon

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the dry ingredients: flour, salt, baking powder, baking soda, sugar, cinnamon, and nutmeg. Cut in butter until coarse crumbs form.
  2. In a large bowl, mash the ripe bananas until smooth. Add milk and yogurt, whisking until blended.
  3. Fold the dry mixture into the wet mixture until just combined. The dough should be slightly sticky.
  4. Shape the dough into an 8-inch disk on a floured surface and wrap in plastic wrap. Freeze for 15 minutes.
  5. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. After chilling, cut the dough into 8 wedges and place on the baking sheet. Brush tops with beaten egg.
  7. Bake for 15-18 minutes until lightly browned. A toothpick should come out clean.
  8. Whisk together the glaze ingredients until smooth. Drizzle over the cooled scones.
