Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Sauté bell peppers and spinach in a skillet with olive oil over medium heat for about 5-7 minutes until softened.
  3. Combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper in a mixing bowl until smooth.
  4. Layer the lasagna starting with ricotta mix, zucchini, sautéed vegetables, more ricotta, and half the mozzarella; repeat layers finishing with mozzarella and parmesan.
  5. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  6. Allow resting for 10 minutes before slicing and serving.
