Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish with non-stick cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Sauté diced onion and minced garlic for 3-4 minutes.
  3. Add ground turkey, cooking until browned and no longer pink, about 5-7 minutes. Season with Italian seasoning, salt, and pepper.
  4. Stir in sliced zucchini and drained diced tomatoes, cooking for an additional 5 minutes.
  5. Remove from heat and mix in half of the shredded cheese until melted.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Top with remaining shredded cheese, grated Parmesan cheese, and breadcrumbs if desired.
  8. Bake for 20-25 minutes until bubbly and golden brown.
