Step-by-Step Instructions
  1. Wash and chop all vegetables, and cut chicken into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat. Add onions and bell peppers, sauté for 5 minutes.
  3. Increase heat to medium-high, add chicken, and cook until browned (5-7 minutes).
  4. Add spices: cumin, chili powder, paprika, salt, and pepper. Stir for 1-2 minutes.
  5. Add sweet potatoes, chicken broth, and diced tomatoes. Bring to a simmer.
  6. Reduce heat, cover, and simmer for 20-25 minutes until sweet potatoes are tender.
  7. Taste and adjust seasoning as needed before serving.
  8. Serve hot with toppings and cornbread.
