Method
 

Preparation
  1. Preheat the oven to 325°F (163°C). Line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine the old-fashioned rolled oats, chopped walnuts, ground cinnamon, ground nutmeg, and salt.
  3. Add the cubed red apple into the dry mixture and fold gently.
  4. In a saucepan over low heat, melt the coconut oil, then mix in the maple syrup and vanilla extract.
  5. Pour the wet mixture over the dry mixture and mix well to coat.
  6. Spread the mixture evenly on the prepared baking sheet and press down gently.
  7. Bake for 22 to 28 minutes, stirring gently halfway through.
  8. Let the granola cool completely on the baking sheet for about 20 minutes before breaking into clusters.
