Step-by-Step Instructions
  1. In a large zip-top bag, combine the chicken breasts with salsa verde, olive oil, lime juice, cumin, salt, and black pepper. Seal tightly and refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high heat, around 400°F. Lightly oil the grill grates with a paper towel dipped in oil.
  3. Place the marinated chicken breasts on the grill. Cook for about 5 minutes, flip, and cook for an additional 4 minutes or until the internal temperature reaches 165°F.
  4. Reduce the heat to medium-low and place a slice of pepper Jack cheese on each piece. Close the grill lid and let the cheese melt for about 1 minute.
  5. Remove the chicken from the grill, let rest for a couple of minutes, and garnish with cilantro. Serve with lime wedges.
