For the Salad
  • 1 cup Orzo or quinoa for a gluten-free option
  • 2 ears Corn fresh off the cob or frozen
  • 3 scallions Scallions white parts for cooking, green parts for salad
  • 1 cup Edamame shelled
  • 2 cups Arugula or spicy mustard greens
  • 1 cup Artichoke Hearts chopped, can substitute with sun-dried tomatoes
For the Dressing
  • 3 tablespoons Oil avocado oil recommended
  • 1 large Lemon zest and juice
  • 1 tablespoon Miso Paste can substitute with nutritional yeast
  • 2 teaspoons Herbs (Dill & Oregano) or basil/parsley
Optional Toppings
  • 1/4 cup Vegan Parm for serving

Method
 

Step-by-Step Instructions
  1. Cook the Orzo: Boil a large pot of salted water, add orzo, and cook until al dente (8-10 mins). Drain and cool.
  2. Grill the Corn: Preheat grill pan, cook corn for 10-12 mins until tender and charred. Cool and cut kernels off the cob.
  3. Sear Scallions & Cook Garlic: In the grill pan, add oil, white scallion parts, and minced garlic. Sear for 2-3 mins until fragrant.
  4. Make the Dressing: Blend garlic, scallions, lemon zest, lemon juice, vinegar, oil, miso paste, and salt until smooth. Add dill and blend again.
  5. Assemble the Salad: In a bowl, combine orzo, corn, green scallions, artichoke hearts, edamame, oregano, and arugula. Toss with dressing.
  6. Serve or Store: Serve immediately, or chill for 30 mins before serving. Store leftovers in an airtight container for up to 4 days.
