Method
 

Preparation
  1. In a large bowl, combine olive oil, lime juice, garlic powder, paprika, and salt to create a flavorful marinade for the chicken.
  2. Add the boneless, skinless chicken breasts and ensure they’re well-coated. Allow to marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat, about 400°F (200°C). Lightly oil the grates to prevent sticking.
  4. Once the grill is hot, place the marinated chicken directly onto the grill grates. Cook for about 6-7 minutes on each side, until internal temperature reaches 165°F (74°C).
  5. While the chicken is grilling, dice the ripe California avocados and mix with cilantro, red onion, and tomatoes. Season with salt and pepper.
  6. Remove the chicken from the grill, let it rest for 5 minutes, then slice it and top generously with the avocado mixture.
