Preparation
- In a large bowl, combine olive oil, lime juice, garlic powder, paprika, and salt to create a flavorful marinade for the chicken.
- Add the boneless, skinless chicken breasts and ensure they’re well-coated. Allow to marinate for at least 30 minutes in the refrigerator.
- Preheat the grill to medium-high heat, about 400°F (200°C). Lightly oil the grates to prevent sticking.
- Once the grill is hot, place the marinated chicken directly onto the grill grates. Cook for about 6-7 minutes on each side, until internal temperature reaches 165°F (74°C).
- While the chicken is grilling, dice the ripe California avocados and mix with cilantro, red onion, and tomatoes. Season with salt and pepper.
- Remove the chicken from the grill, let it rest for 5 minutes, then slice it and top generously with the avocado mixture.
Serving
- Plate the grilled chicken and serve with sides like a crisp salad or grilled vegetables for a well-rounded meal.

Notes
Allowing the chicken to marinate enhances flavor and juiciness. Serve with fresh avocado topping for best flavor.
