For the Grilled Broccolini
  • 1 bunch Fresh Broccolini Wash and trim for optimal grilling.
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • 1 tablespoon Lemon Juice Freshly squeezed is best.
  • 1 teaspoon Kosher Salt Sea salt can be used.
  • 1 teaspoon Black Pepper Freshly ground is ideal.
For the Tomato Butter
  • ½ cup Unsalted Butter Can swap in vegan butter.
  • 2 tablespoons Tomato Paste Sun-dried tomato paste can be a substitute.
  • 2 tablespoons Fresh Parsley Or use dried herbs as a substitute.
  • 1 teaspoon Fresh Thyme Can use dried thyme if needed.
  • 2 cloves Minced Garlic Garlic powder may be used but won't taste the same.
  • ½ teaspoon Smoked Paprika Regular paprika can be used, but without smokiness.

Method
 

Steps
  1. Preheat your grill to medium-high heat, approximately 400°F.
  2. Prepare the broccolini by washing and trimming it before marinating.
  3. Whisk together olive oil, lemon juice, kosher salt, and black pepper to create the marinade.
  4. Grill the marinated broccolini for about 6 minutes, turning halfway through.
  5. Mix softened butter with tomato paste, parsley, thyme, garlic, salt, and smoked paprika for the tomato butter.
  6. Serve the grilled broccolini topped with the tomato butter.
