Ingredients
  

For the Muffins
  • 2 cups All-Purpose Flour can substitute with whole wheat flour
  • 2 teaspoons Baking Powder ensure it is fresh
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Ginger fresh ginger can be used if finely grated
  • 1/2 teaspoon Salt
  • 3/4 cup Granulated Sugar coconut sugar is a great alternative
  • 2 Eggs room temperature
  • 1 cup Milk any type or non-dairy alternatives
  • 1/2 cup Plain Greek Yogurt sour cream can be used as a substitute
  • 1/2 cup Coconut Oil melted
  • 1 teaspoon Vanilla Extract optional but recommended
  • 1/4 cup Candied Ginger optional
For the Glaze
  • 1 cup Confectioner’s Sugar can replace with powdered erythritol
  • 1 tablespoon Lemon Drop Seriously Delicious CBD Oil optional, substitute with fresh lemon juice
  • 2 tablespoons Water adjust for consistency

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare your muffin tin by greasing or lining it.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground ginger, salt, and granulated sugar.
  3. In a separate bowl, whisk together the eggs, milk, plain Greek yogurt, melted coconut oil, and vanilla extract.
  4. Gently fold the wet ingredients into the bowl of dry ingredients.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, whisk together the confectioner’s sugar, CBD oil (if using), and water to achieve a smooth consistency.
  9. Drizzle the glaze over the cooled muffins and sprinkle with candied ginger if desired.
