Step-by-Step Instructions for Garlic Scape Pesto
  1. Begin by harvesting or purchasing fresh garlic scapes. Rinse them thoroughly under cool water, then trim off the woody ends using a sharp knife.
  2. In a food processor, add the trimmed garlic scapes and pulse until a coarse paste forms, about 30 seconds.
  3. Add olive oil, walnuts, Parmesan cheese, fresh lemon juice, basil, salt, and cracked black pepper. Blend until smooth and creamy, about 1-2 minutes.
  4. Taste and adjust seasoning as needed, adding more garlic scapes or walnuts for a stronger flavor, or more Parmesan or lemon juice if it's too garlicky.
  5. Scoop into small balls on a cookie sheet lined with parchment paper. Freeze until solid (1-2 hours), then transfer to a zip-top bag.
