- In a large mixing bowl, combine the coleslaw mix, rinsed black beans, corn kernels, diced jalapeño, red bell pepper, sliced green onions, and chopped cilantro. Toss gently to incorporate all the colorful ingredients evenly.
- In a separate medium bowl, whisk together sour cream, mayonnaise, freshly squeezed lime juice, and chipotle sauce until the mixture is smooth and creamy.
- Drizzle the prepared dressing over the vegetable medley, reserving a handful of Fritos for topping later. Gently stir the mixture ensuring each vegetable is coated.
