  • 1 medium Red Bell Pepper Finely diced, green bell pepper can be a milder alternative.
  • 3 stalks Green Onions Finely sliced, substitute with chives for a different taste.
  • 1 bunch Cilantro Finely chopped, omit if not a fan of cilantro.
For the Dressing
  • 1 cup Sour Cream Greek yogurt can be a healthier substitute.
  • 1/2 cup Mayonnaise Substitute with light mayo or vegan mayo if desired.
  • 2 limes Lime Juice Fresh lemon juice can be an alternative.
  • 2 tablespoons Chipotle Sauce Use regular hot sauce for a milder version.
For the Topping
  • 1 bag Chili Cheese Fritos Gluten-free options available.
  • 1 tablespoon Taco Seasoning Homemade blend or store-bought can be used.
  • 1 teaspoon Ground Cumin Can be omitted but enhances flavor profile.

Preparation Steps
  1. In a large mixing bowl, combine the coleslaw mix, rinsed black beans, corn kernels, diced jalapeño, red bell pepper, sliced green onions, and chopped cilantro. Toss gently to incorporate all the colorful ingredients evenly.
  2. In a separate medium bowl, whisk together sour cream, mayonnaise, freshly squeezed lime juice, and chipotle sauce until the mixture is smooth and creamy.
  3. Drizzle the prepared dressing over the vegetable medley, reserving a handful of Fritos for topping later. Gently stir the mixture ensuring each vegetable is coated.
  4. Just before serving, sprinkle the reserved Fritos over the top of your salad to maintain their crunch. Serve immediately.

Notes
