Ingredients
  

For the Marinade
  • 1/4 cup Olive Oil or avocado oil
  • 3 cloves Garlic freshly minced
  • 2 tablespoons Red Wine Vinegar or white wine vinegar
  • 1 teaspoon Oregano or Italian seasoning
  • 1 teaspoon Dill fresh or dried
  • 1 pound Chicken Breast or chicken thighs
  • 1 small Shallot or red onion
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 1 whole Lemon for juice and zest
For the Salad
  • 6 cups Romaine Lettuce or mixed greens
  • 1 cup Feta Cheese crumbled goat cheese optional
  • 1 medium Cucumber sliced
  • 2 medium Tomatoes diced or cherry tomatoes
  • 1 small Red Onion sliced
  • 1/2 cup Kalamata Olives or green olives
  • 1/2 teaspoon Red Pepper Flakes optional

Method
 

Preparation
  1. Mince the garlic, peel and slice the cucumber, dice the tomatoes, and slice the red onion.
Marinade
  1. Whisk together olive oil, minced garlic, red wine vinegar, oregano, dill, salt, and pepper.
Chicken
  1. Cut chicken into chunks, coat with marinade, and let sit for 15 minutes.
  2. Grill chicken on medium-high heat for 5-6 minutes per side until cooked.
Dressing
  1. Whisk together shallot, Dijon mustard, vinegar, oregano, lemon juice, and olive oil.
Assembly
  1. In a bowl, combine romaine, grilled chicken, cucumber, tomatoes, red onion, feta, and olives.
  2. Drizzle with dressing and toss gently.
