- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with butter or non-stick spray.
- In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt until well-combined.
- In a large bowl, cream together softened butter and granulated sugar using an electric mixer for 3-4 minutes until light and fluffy.
- Add eggs one at a time, then mix in lemon zest, lemon juice, buttermilk, and vanilla extract until smooth.
