Method

Preparation
  1. Start by washing and coring your apples, then slice them thinly, about 1/8 inch thick.
  2. In a bowl, toss the apple slices with lemon juice, ground cinnamon, and brown sugar.
  3. Microwave the mixture for 1-2 minutes until the apples are slightly softened but still firm.
  4. Preheat your oven to 375°F (190°C).
  5. On a well-floured surface, roll out your thawed puff pastry.
  6. Cut the pastry into 2-inch wide strips.
  7. Take one pastry strip and lay it flat, arranging overlapping apple slices along one edge.
  8. Fold the bottom portion of the pastry strip up to hug the apples gently and roll it into a rose shape.
  9. Pinch the base to keep it secure and place each assembled rose into a greased muffin tin.
  10. Beat the egg thoroughly for the egg wash and apply it over the top of each rose.
  11. Bake for 25-30 minutes until the roses puff up and turn golden brown.
  12. Remove from the oven and let them cool for about 10 minutes.
  13. Dust with powdered sugar and garnish with fresh mint leaves before serving.
