Instructions for Easy Sheet Pan Cashew Chicken
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- In a large mixing bowl, whisk together soy sauce, honey, rice vinegar, toasted sesame oil, minced garlic, and grated ginger until smooth.
- Add the chicken pieces to the bowl and coat them thoroughly. Cover and let marinate for at least 15 minutes.
- Spread the marinated chicken on the sheet pan. Add bell peppers and red onion around the chicken and drizzle remaining marinade on top.
- Bake for 20 minutes without opening the oven door.
- Stir the mixture, add cashews, then bake for another 10-15 minutes until the chicken is cooked through.
- Let it rest for 5 minutes, then garnish with cilantro and serve.
