Method
 

Instructions for Easy Sheet Pan Cashew Chicken
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a large mixing bowl, whisk together soy sauce, honey, rice vinegar, toasted sesame oil, minced garlic, and grated ginger until smooth.
  3. Add the chicken pieces to the bowl and coat them thoroughly. Cover and let marinate for at least 15 minutes.
  4. Spread the marinated chicken on the sheet pan. Add bell peppers and red onion around the chicken and drizzle remaining marinade on top.
  5. Bake for 20 minutes without opening the oven door.
  6. Stir the mixture, add cashews, then bake for another 10-15 minutes until the chicken is cooked through.
  7. Let it rest for 5 minutes, then garnish with cilantro and serve.
