- Bloom the gelatin by sprinkling it over cold water and let it sit for 5 minutes.
- Heat heavy cream, whole milk, and sugar in a saucepan over medium heat for 5-7 minutes until hot.
- Remove from heat, mix in bloomed gelatin and vanilla extract until dissolved, and cool for 10 minutes.
- Pour the mixture into serving glasses, leaving space for mango puree, and refrigerate for at least 4 hours to set.
- Blend peeled and chopped mangoes with lime juice until smooth for mango puree.
- Spoon mango puree on top of the set panna cotta and chill for an additional 30 minutes.
- Garnish with mint leaves and mango slices before serving.
