  • 2 cups Cooked Chicken Shredded rotisserie chicken works best.
  • 1 cup Uncooked White Rice Ensure it's fully submerged in broth.
  • 2 cups Chicken Broth Vegetable broth can be substituted.
  • 1 cup Cucumber Diced zucchini is a good substitute.
  • 1 medium Red Onion Shallots can be used for a sweeter taste.
  • 1 cup Grape Tomatoes Diced bell peppers can be replaced.
  • 1/2 cup Kalamata Olives Green olives are a pleasant alternative.
  • 1 cup Greek-style Tzatziki Sauce Mix Greek yogurt with cucumber and dill if needed.
  • 1 teaspoon Garlic Powder Use fresh garlic for a bolder kick.
  • 1 teaspoon Dried Oregano Fresh oregano is a good substitute.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Feta Cheese Goat cheese is a delicious alternative.
  • 1/4 cup Fresh Parsley Dill or mint can be used instead.

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Evenly spread uncooked white rice across the bottom of the prepared baking dish.
  3. Pour the chicken broth gently over the rice, ensuring it is fully submerged.
  4. Layer cooked chicken evenly over the rice.
  5. Add diced cucumber, chopped red onion, halved grape tomatoes, and sliced Kalamata olives on top.
  6. Mix the tzatziki sauce with garlic powder, oregano, salt, and pepper in a separate bowl.
  7. Spread the tzatziki mixture evenly over the layered vegetables and chicken.
  8. Sprinkle crumbled feta cheese on top of the tzatziki layer.
  9. Cover with aluminum foil and bake for 45 minutes, then remove foil and bake for an additional 10 minutes.
  10. Let cool for a few minutes, then garnish with fresh parsley before serving.
