- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Evenly spread uncooked white rice across the bottom of the prepared baking dish.
- Pour the chicken broth gently over the rice, ensuring it is fully submerged.
- Layer cooked chicken evenly over the rice.
- Add diced cucumber, chopped red onion, halved grape tomatoes, and sliced Kalamata olives on top.
- Mix the tzatziki sauce with garlic powder, oregano, salt, and pepper in a separate bowl.
- Spread the tzatziki mixture evenly over the layered vegetables and chicken.
- Sprinkle crumbled feta cheese on top of the tzatziki layer.
- Cover with aluminum foil and bake for 45 minutes, then remove foil and bake for an additional 10 minutes.
