Step-by-Step Instructions for Lilac Jelly
  1. Harvest 4 cups of lilac blossoms, removing stems and green parts. Rinse the petals under cool water.
  2. Pour 4 cups of boiling water over the lilac petals and steep for 10 minutes.
  3. Strain the lilac tea into a saucepan, discarding petals.
  4. Add 2 tablespoons of lemon juice to the strained tea, then sprinkle in the powdered pectin and heat over medium, bringing to a boil.
  5. Quickly add 4 cups of sugar once boiling, stirring until dissolved, then boil vigorously for an additional minute.
  6. Pour the hot jelly into sterilized jars, leaving 1/4 inch headspace, and seal.
  7. Cool jars at room temperature until sealed and store in the refrigerator or freeze.
