Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until combined.
- In a large bowl, beat together the softened butter, granulated sugar, brown sugar, and vanilla until light and creamy. Add the egg and mix until fully incorporated.
- Gradually add the dry mixture to the butter/sugar blend, mixing on low until just combined. Fold in chocolate chips.
- Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for about 10 minutes or until edges are golden.
- Let the cookies cool on wire racks.
- Beat together cream cheese, powdered sugar, and a splash of vanilla until smooth for the filling.
- Once the cookies are cool, spread the cream cheese filling on one cookie and top with another to create a sandwich. Optional: chill in the fridge for 30 minutes.

Notes
Ensure butter is softened for best texture; don't overmix to avoid tough cookies. Experiment with fillings for variety.
