- Prepare Zucchini: Wash and dry zucchini, slice lengthwise into planks about 1/8 inch thick. Sprinkle with salt and let sit in a colander for 10-15 minutes, then pat dry.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 5 minutes. Stir in minced garlic and spinach, cooking until spinach wilts.
- Mix Filling: In a bowl, combine ricotta, 3/4 cup mozzarella, Parmesan, egg, and sautéed mixture. Add seasoning to taste and stir until well blended.
- Assemble Rolls: Preheat oven to 375°F. Spread marinara on the bottom of a baking dish. Take a zucchini slice, spoon cheese filling onto one end, and roll up tightly.
- Top and Bake: Pour remaining marinara over rolls, sprinkle with remaining mozzarella. Cover with foil and bake for 20 minutes, then remove foil and bake for additional 10-15 minutes.
- Finish and Serve: Let cool for 5-10 minutes before serving. Garnish with basil and extra Parmesan.
