Cooking Steps
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the diced potatoes and season with salt, black pepper, and paprika. Cook for 10-12 minutes, stirring occasionally, until golden brown and crisp.
  3. Continue cooking for an additional 2 minutes after adding the remaining spices, ensuring each piece is coated.
  4. Whisk 4 large eggs with a splash of milk in a bowl until frothy. Set aside.
  5. Push the cooked potatoes to one side and pour the egg mixture into the other side. Let cook for about 20-30 seconds, then scramble together with the potatoes.
  6. Sprinkle shredded cheddar cheese over the mixture and let cook for 1-2 minutes until melted.
  7. Warm 4 tortillas in a separate pan or microwave for 20-30 seconds.
  8. Spoon the cheesy potato-egg mixture into the center of each warmed tortilla and top with fresh cilantro and diced onions if desired.
