Ingredients
  

For the Crust
  • 1 cup Almond Flour
  • 2 tablespoons Coconut Oil melted
  • 2 tablespoons Maple Syrup
  • 1/4 teaspoon Salt
For the Filling
  • 2 cups Blueberries fresh or frozen
  • 1/4 cup Chia Seeds
  • 1/4 cup Maple Syrup or honey
  • 1 teaspoon Vanilla Extract
  • 1 cup Almond Milk

Method
 

For the Crust
  1. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until well combined.
  2. Press the mixture into the bottom of a pie dish to form the crust.
For the Filling
  1. In a blender, combine blueberries, chia seeds, maple syrup, vanilla extract, and almond milk. Blend until smooth.
  2. Pour the filling into the crust and spread evenly.
  3. Refrigerate for at least 1 hour to allow the pie to set.
To Serve
