Preparation
  1. In a medium pot, heat 4 cups of water or dashi stock over medium heat until it just begins to simmer, about 5 minutes.
  2. Once the broth is warm, reduce the heat to low and whisk in 1/4 cup of high-quality miso paste until fully dissolved.
  3. If using tofu, add it along with a handful of dried seaweed to the pot, and heat gently for about 3 minutes.
  4. Ladle the soup into bowls and top with chopped scallions or green onions before serving.
