Cooking Steps
- Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
- In a large mixing bowl, combine ground pork, ground beef, breadcrumbs, eggs, and half of the bacon. Season with salt and pepper and mix gently.
- Shape the mixture into mini loaves, about the size of a palm.
- Wrap the remaining bacon strips around each mini meatloaf and secure them if necessary.
- Line a baking sheet with parchment paper, arrange the meatloafs, and bake for about 50 minutes until bacon is crispy and internal temperature reaches 160°F (70°C).
- Remove from oven and let rest for about 5 minutes before serving.
