For the Bacon Wrap
  • 8 slices Bacon Thick-cut bacon recommended.
For the Topping
  • 1/2 cup Ketchup or BBQ Sauce Spiced barbecue sauce for a kick.

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
  2. In a large mixing bowl, combine ground pork, ground beef, breadcrumbs, eggs, and half of the bacon. Season with salt and pepper and mix gently.
  3. Shape the mixture into mini loaves, about the size of a palm.
  4. Wrap the remaining bacon strips around each mini meatloaf and secure them if necessary.
  5. Line a baking sheet with parchment paper, arrange the meatloafs, and bake for about 50 minutes until bacon is crispy and internal temperature reaches 160°F (70°C).
  6. Remove from oven and let rest for about 5 minutes before serving.
