  • 1 large Egg For brushing on pinwheels

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll the thawed puff pastry on a lightly floured surface and roll it out to approximately 12x12 inches.
  3. In a medium bowl, combine softened cream cheese, crumbled feta, and chopped fresh herbs. Mix until smooth.
  4. Spread the cream cheese mixture evenly over the puff pastry, leaving a ½-inch border around the edges.
  5. Sprinkle cranberries evenly across the top of the cream cheese filling.
  6. Roll the puff pastry tightly from one long edge to form a log and seal the ends.
  7. Slice the log into ½-inch thick pinwheels and arrange them cut-side up on the prepared baking sheet.
  8. Beat an egg and brush the tops of the pinwheels with the egg wash.
  9. Bake in the preheated oven for 15-20 minutes until golden brown and puffed up.
  10. Cool for a few minutes before transferring to a serving platter and enjoy!
