Cherry Filling
  • 2 cups Fresh Cherries or frozen cherries, thawed
  • 1/2 cup Sugar adjust according to tartness
  • 2 tablespoons Cornstarch can substitute with tapioca starch
  • 1 teaspoon Vanilla Extract or almond extract
Cream Cheese Glaze
  • 4 ounces Cream Cheese can substitute with Greek yogurt
  • 1 cup Powdered Sugar adjust for sweetness
  • 2 tablespoons Milk almond milk for dairy-free
Topping Ideas
  • 1/4 cup Sliced Almonds can substitute with chopped walnuts
  • 1 tablespoon Zest of Lemon or lime zest

Method
 

Preparation Steps
  1. Gather all your ingredients and preheat your oven to 400°F (200°C).
  2. In a large bowl, combine flour and salt, then cut in the cold butter until it resembles coarse crumbs.
  3. Gradually add cold water, mixing until the dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a medium saucepan, combine cherries, sugar, cornstarch, and vanilla over medium heat for 5-7 minutes.
  5. Roll out chilled dough to 1/4 inch thick; cut into 4x6 inch rectangles.
  6. Place a tablespoon of cherry filling on each rectangle, fold the edges, and pinch to seal.
  7. Arrange pastries on a parchment-lined baking sheet, bake for 20-25 minutes until golden brown.
  8. Beat together cream cheese, powdered sugar, and milk until smooth; drizzle over cooled pastries.
  9. Finish with sliced almonds and lemon zest, serve warm.
