Ingredients
  

For the Dough
  • 2 cups all-purpose flour or gluten-free flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt or kosher salt adjusted
  • 1 teaspoon ground cinnamon fresher is better
  • 1/2 teaspoon ground cardamom fresh spices work best
  • 1/2 teaspoon ground ginger fresh for extra kick
  • 1/4 teaspoon ground cloves use sparingly
  • 1/4 teaspoon ground nutmeg freshly grated recommended
  • 1/2 cup unsalted butter room temperature, vegan butter as substitute
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg room temperature
  • 1 large egg yolk
  • 1 teaspoon vanilla extract pure preferred
  • 1/2 cup strong brewed black tea cooled
For Coating
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
Optional Mix-ins
  • 1 cup white chocolate chips or chunks
  • 1/2 cup chopped toasted pecans or walnuts
  • 1/4 cup chopped crystallized ginger

Method
 

Steps
  1. In a medium bowl, combine flour, baking soda, baking powder, fine sea salt, cinnamon, cardamom, ginger, cloves, and nutmeg. Whisk until well combined and set aside.
  2. In a large mixing bowl, beat butter with granulated sugar and light brown sugar on medium speed for 2-3 minutes until light and fluffy.
  3. Add egg, egg yolk, vanilla extract, and cooled black tea to the creamy mixture. Mix on low speed until fully combined, scraping down the sides as needed.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Fold in optional mix-ins, if desired.
  5. Cover dough with plastic wrap and chill in the refrigerator for 20-30 minutes. Preheat oven to 350°F (175°C) during this time.
  6. In a small bowl, mix granulated sugar, ground cinnamon, ground cardamom, and ground ginger for the coating.
  7. Scoop chilled dough, roll in the coating mixture, and place on a lined baking sheet with space between each ball.
  8. Bake cookies for 9-11 minutes until edges are set and centers are soft. Avoid overbaking.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
