Step-by-Step Instructions
  1. Soak the raw cashews in hot water for at least 15 minutes or overnight for creamier results.
  2. Preheat your oven to 350°F (175°C).
  3. Line an 8x8-inch pan with parchment paper.
  4. In a double boiler, melt together unsweetened chocolate, coconut oil, and almond butter until smooth. Mix in maple syrup and vanilla extract. Incorporate the egg (or flax egg), almond flour, and cacao powder.
  5. Pour the brownie layer into the prepared pan and bake for 15-17 minutes until set.
  6. Blend soaked cashews, cacao powder, coconut milk, coconut oil, vanilla, maple syrup, coffee granules (if using), and sea salt in a high-powered blender until smooth.
  7. Pour the cheesecake mixture over the cooled brownie layer and freeze for 2-3 hours.
  8. Allow the bars to sit at room temperature for 15-20 minutes before slicing into squares.
